Broccoli with Ginger

1 Clove garlic, minced
1 piece of fresh ginger root; 1/2
2 teaspoons of vegetable oil
1 pound of broccoli, cut into florets
1 medium Leek, thinly sliced
2 tablespoons of vegetable stock
1 teaspoon of Tamari soy sauce 



Sauté ginger and garlic in oil for 1 minute. Add the broccoli, leek, and stock. Toss together. Cover the pan and cook for 3 minutes. Remove the cover and continue to sauté until the vegetables are just tender, about 10 minutes. Mix in the tamari and serve immediately.  Serving Size: 4
