one 10 ounce package of frozen chopped broccoli 1 medium carrot, scraped and chopped 1/4 cup of water 8 eggs 1/2 cup of milk 1 tablespoon of instant minced onion 2 teaspoons of prepared mustard 1 teaspoon of seasoned salt 1/8 teaspoon of pepper 3/4 cup (3 ounces) of shredded sharp Cheddar cheese 1 tablespoon of butter or margarine
Place broccoli, carrot and water in a 10 inch skillet. Cover, cook over medium high heat 10 minutes or until carrot is tender. Drain, set aside. Combine eggs, milk, onion, mustard, salt and pepper, beat well. Stir in cheese and broccoli carrot mixture. Melt butter in a 10 inch ovenproof skillet. Pour egg mixture into skillet. Cook over medium low heat 10 minutes or until eggs are almost set. Place skillet in oven, broil 6 inches from heating element 3 minutes or until top is lightly browned and eggs are set. Cut frittata into wedges and serve immediately. 6 servings
