| | Broccoli with Cashews
one 10 ounce package of frozen broccoli spears 1/4 cup of coarsely chopped cashews 1 tablespoon of butter or margarine 2 teaspoons of finely shredded lemon rind
Cook the broccoli, drain. In a small skillet, cook and stir cashews in hot butter for 1 to 2 minutes or until golden brown. Remove from heat, stir in lemon rind. Pour over broccoli spears. Makes 4 servings |
