8 large broccoli spears, steamed one 6 ounce package of sliced cooked ham, 8 slices 1 tablespoon of butter or margarine 2 tablespoons of all purpose flour 2 teaspoons of dry mustard 1 1/2 cups of milk a dash of salt 1/4 teaspoon of pepper 1/2 cup ( 2 ounces) of shredded sharp Cheddar cheese or Swiss cheese paprika
Center 1 broccoli spear at short edge of each ham slice. Roll broccoli spear in ham slice tightly. Place rolls in a 12x8x2 inch baking dish, seam side down. Melt butter in a heavy saucepan over low heat, add flour and dry mustard, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly, until thickened and bubbly. Add salt, pepper and cheese, stir until cheese melts. Pour sauce over ham rolls, sprinkle with paprika. Bake at 450ºF. for 10 minutes or until hot and bubbly. Serve immediately. 4 servings
