Elbow Macaroni w/Broccoli
2 quarts of water
1 teaspoon of salt
4 1/2 cups of broccoli florets
1 cup of elbow macaroni
3 tablespoons of olive oil
3 cloves garlic, peeled and finely chopped
A pinch of cayenne pepper
Place water and salt in large saucepan and bring to a boil. Add
broccoli and cook, covered, over medium heat for 15 minutes; drain,
reserving cooking liquid. Set broccoli aside and keep warm.
Bring reserved broccoli cooking liquid to a boil. Add macaroni and boil
for 8 minutes or just until tender, stirring frequently; drain.
Meanwhile, heat olive oil in small saucepan. Add garlic, anchovies, and
cayenne pepper; cook over low heat for 15 minutes, stirring frequently.
Place macaroni in heated serving dish. Mix with broccoli and anchovy
sauce; let stand for 5 minutes to allow flavors to blend. Mix once more,
then serve. Serves 4 |
