Broccoli in Cheese Sauce

One 16 ounce bag of frozen broccoli cuts
One 24 x 12 inch sheet of heavy duty foil, lightly sprayed with nonstick cooking spray
One 10 3/4 ounce can of condensed cheddar cheese soup
1 medium red or yellow bell pepper, cut into 1 inch pieces
1/4 cup of chopped onion
1/4 cup of milk
1 1/2 teaspoons of Worcestershire sauce
1/8 teaspoon of black pepper  

Preheat oven to 450ºF. Place the broccoli in center of sheets of foil, Fold foil up around broccoli to create pan. Combine the soup, bell pepper, onion, milk, Worcestershire sauce and black pepper in medium bowl, stir to blend. Pour over broccoli. Double fold sides and ends of foil to seal package, leaving head space for heat circulation. Place packet on baking sheet. Bake for 25 minutes or until the vegetables are tender. Remove from oven. carefully open one end of packet to allow steam to escape. Open packet and transfer broccoli mixture to serving bowl. Makes 6 servings

Broccoli in Cheese Sauce 2

2 cups of cooked, chopped broccoli
3/4 cup of grated Cheddar cheese
3 eggs
1 1/2 cup of milk or light cream
3/4 teaspoon of salt
1/4 teaspoon of ground pepper

Preheat oven to 350ºF. Butter 1 1/2 quart baking dish. Put in broccoli and sprinkle with cheese. Beat eggs slightly in bowl and stir in cream and salt and pepper. Stir into broccoli mixture. Place dish in shallow pan with hot water halfway up sides of pan. Bake 45 to 60 minutes or until custard is set. 

Broccoli in Cheese Sauce 3

1 1/2 pounds of broccoli, cooked
1/4 cup of butter or margarine
1/4 cup of flour
2 cups of milk, warm
1 teaspoon of salt
1/4 teaspoon of white pepper
1 cup of  Cheddar cheese, grated

Melt butter and stir in flour. Add milk and cook until slightly thick. Add salt and pepper and cheese. Put cooked broccoli in baking dish and pour cheese sauce over top. Sprinkle with paprika and bake in 350ºF. oven for 20 minutes.

Broccoli in Mushroom Sauce with Cheddar Cheese 4

16 ounce bag of frozen broccoli
12 ounce can of mushroom soup with 1/2 can milk
8 ounce bag of shredded Cheddar cheese
Salt and pepper to taste

Thaw broccoli. Put in a casserole dish or glass pan. Heat the mushroom soup with 1/2 can milk. Pour the soup over the broccoli and mix. Bake at 325ºF. for 20 minutes. Add Cheddar cheese on top and bake for additional 5 minutes. 

Broccoli & Cauliflower in Cheese Sauce 5

1/2 teaspoon of salt
1 package of frozen broccoli spears
1 package of frozen cauliflower
6 slices of American cheese
2 tablespoons of flour
2 1/2 tablespoons of butter
1 1/4 cup of milk

Cook broccoli and cauliflower, following directions on package. Drain and set aside. In medium saucepan, melt butter, add flour, stirring until forms a smooth paste. Cook on low heat, until flour bubbles but don't brown. Then cool slightly and add milk slowly, stirring constantly until blended. Add 1/2 teaspoon salt and 6 or more slices of cheese broken in small pieces. Keep stirring until it becomes a thickened cheese sauce. Pour over vegetables and gently fold together.
