Caramelized Onions

1 tablespoon of olive oil
3 large  onions, sliced in rings
1 tablespoon of brown sugar
2 teaspoons of white sugar
1 cup of red wine
1/4 cup of balsamic vinegar
freshly ground pepper

Heat oil in a large saucepan. Add onions and cook over medium high heat until golden brown, stirring frequently, about 10 minutes. Reduce heat to medium. Sprinkle sugars over onions and sauté for 5 minutes more. Increase heat to high. Add wine and vinegar and boil until almost no liquid remains in pan, about 10minutes. Season with pepper. Serves 4
