| | Cabbage in Mustard Sauce
1 medium cabbage, cleaned 1 tablespoon of butter or margarine 2 tablespoons of all purpose flour 1 cup of milk 2 teaspoons of prepared mustard 1 teaspoon of dry mustard 1/2 teaspoon of onion juice 1/4 teaspoon of salt 1/8 teaspoon of garlic powder Fresh parsley sprigs, optional
Cut cabbage into 6 wedges. Cover and cook in a small amount of boiling salted water 15 minutes or until tender; drain well. Set aside; keep warm.
Melt butter in a heavy saucepan over low heat; add flour, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until sauce is thickened and bubbly. Add remaining ingredients except parsley, stirring well.
Place cabbage wedges on a serving platter using a slotted spoon. Spoon sauce over cabbage. Garnish with parsley sprigs, if desired. Yield: 6 servings. |
