Crisp Fried Cabbage

 

Crisp Fried Cabbage

1 small head of cabbage
1/2 pound of bacon
1 onion
1 carrot
Tabasco
Salt & pepper


Instructions:

Chop the bacon into 1/2 inch pieces and cook in a large pan until brown but not crisp. Add the chopped onion and cook until soft. Shred the cabbage and grate the carrot. Add both to the pan and cook over high heat, stirring continuously. Season with Tabasco, salt,  and pepper. Don't overcook the cabbage. It should be hot completely through but still crisp.

This is an excellent dish that can be padded into a full meal by adding almost anything at hand. Add leftover diced meat or chicken, mushrooms, green pepper, celery, tomatoes. Since the seasoning comes from the bacon and Tabasco you might want to try your own use of herbs.
