Shred the cabbage coarsely. Melt the butter in a large heavy saucepan, then add all of the ingredients except the vinegar. Add 1/4 cup of water, then cover and bring to a boil. reduce the heat and simmer for 2 hours, stirring occasionally. Remove the bay leaf and stir in the vinegar. Makes 6 servings
