Vegetarian Un-stuffed Cabbage Rolls

1/2 Head Cabbage
2 cups of cooked rice (I use brown )
1/2 cup of whole wheat couscous
1/4 cup of raisins
1/2 cup of fresh or frozen corn
one 16 ounce can of chopped tomatoes
one 12 ounce can of tomato sauce
1 teaspoon of fresh lemon juice
1 tablespoon of brown sugar
1/4 teaspoon each of cardamom, coriander,
1 pinch of allspice
1/8 teaspoon of ground cloves

Slice cabbage diagonally. Pour hot water over it to make it limp. Drain. Mix rice, couscous, raisins and corn and set aside. Mix tomatoes with other ingredients and spread in bottom of a large ceramic casserole dish lightly coated with non-stick spray. Cover with layers of the cabbage and the rice mixture. Top with the rest of the tomato mixture and cover with foil. Bake at 325ºF.   for 30-45 minutes, until bubbly. Serve hot.
