Snow Pea, Pepper & Cabbage Salad

2 tablespoons of olive oil
1 1/2 tablespoon of rice wine vinegar
1 teaspoon of salt
1/2 packet of sugar substitute
1/2 pound of snow peas
3 cups of shredded green cabbage - (about 1/2 pound)
1 red bell pepper, thinly sliced
3 green onions, thinly sliced
1/4 cup of fresh chopped mint

Mix the olive oil, vinegar, salt and sugar substitute in a small bowl. Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high one minute. Drain and slice in thirds lengthwise.

Mix snow peas, cabbage, pepper, onion and mint in a large bowl. Add dressing; toss to coat. Chill 15 minutes to blend flavors.

This recipe yields 4 servings.
