2 1/2 cups of cornmeal mix 1/4 teaspoon of ground red pepper 1/4 teaspoon of black pepper 1/4 cup of finely chopped onion 2 tablespoons of finely chopped green pepper one 2 ounce jar of diced pimiento, drained one 8 ounce can of cream style corn 1/2 cup of boiling water vegetable oil
Combine the first 7 ingredients in a large bowl, stir in boiling water. Let stand for 10 minutes. Pour oil to depth of 1/4 inch in a large skillet. Using a tablespoon dipped in hot water, drop cornmeal mixture into hot oil. Fry over medium heat 1 minute on each side or until golden. Drain on paper towels. Yield: 2 dozen |
