Crispy Corn Fritters 2

Crispy Corn Fritters 2

1 1/2 cup of all purpose flour
2 teaspoons of baking powder
2 teaspoons of sugar
1 teaspoon of salt
1/4 teaspoon of freshly ground pepper
1 egg, beaten
1/2 cup of milk
1 tablespoon of melted butter or margarine
2 cups of fresh corn, cut from the cob
vegetable oil



Sift together dry ingredients. Combine the egg, milk, and butter and stir into dry ingredients. Add corn and mix well. Drop spoonfuls of batter into oil that has been preheated to 375ºF.   Fry until browned on both sides. Makes 15-20 small fritters.
