Corn & Chili Soup

2 tablespoons of canola or olive oil
1onion, chopped fine
2 stalks celery, chopped fine
1/2 cup of apple fiber
four 8 ounce cans of tomato sauce
1 quart of fat free chicken broth or water
two 4 ounce cans of chopped green chilies
1/4 teaspoon each of cumin and chili powders
one 10 ounce package of frozen corn kernels

In a medium saucepan heat oil. When hot, add onion and celery and sauté for 5 minutes, stirring frequently. Add apple fiber, tomato sauce, chicken broth  or water, chilies, cumin, chili powder and corn. Bring to a simmer and cook gently for 10 minutes. Makes 10 servings
