Vegetable oil for frying 1 tablespoon of vegetable oil 2 cups of whole kernel corn: 4 or 5 large ears, scraped or one 10 ounce package of frozen corn or one 12 or 16 ounce can, drained 1 cup of unsifted, all purpose flour 1/4 cup of milk 2 eggs 1 teaspoon of double acting baking powder 1/2 teaspoon of salt Maple or maple blended syrup
Pour vegetable oil into electric skillet to 1/2 inch depth. Heat oil to 400ºF. on deep frying thermometer. Using fork, stir together 1 tablespoon of oil, corn, flour, milk, eggs, baking powder and salt in medium bowl. Drop batter by large tablespoonfuls into hot oil and fry for 3 to 5 minutes until golden brown. Turn each fritter once. with slotted spoon, remove fritters to paper towels. Serve hot with syrup. Delicious by themselves or with fried chicken, crisp bacon or baked ham. Makes 6 fritters
