Corn Fritters 4

Corn Fritters 4

1 cup of yellow cornmeal
3/4 cup of all purpose flour
3 tablespoons of sugar
1 teaspoon of baking powder
A pinch of nutmeg
1 egg
1/2 cup of milk
One 6 ounce can of corn, reserve 1/4 cup of liquid and discard the remainder



Oil for deep frying In a medium bowl or on a piece of waxed paper, stir together the cornmeal, flour, sugar, baking powder and nutmeg. In a large bowl, beat the egg. Stir in the milk and reserved corn liquid. Stir in the dry ingredients until combined. Stir in the corn. In a large pot, pour the oil 2 inches deep and heat until it bubbles when a small drop of batter is dropped in. Drop the batter by rounded tablespoons into the oil. Cook until golden on one side. Turn and cook until golden on the other side. Remove from the oil and drain on paper towels. Makes 3 1/2 dozen, Serves 6 to 8
