Fresh Corn Oysters
1 cup of all purpose flour 1 teaspoon of baking powder 1 teaspoon of salt 1 egg, beaten 3 cups of fresh corn kernels (about 6 ears fresh corn) 2 tablespoons of whipping cream 1 tablespoon of butter or margarine, melted Vegetable oil
Combine flour, baking powder, and salt in a medium mixing bowl; mix well. Combine egg, corn, whipping cream, and butter; mix well, and stir into dry ingredients.
Drop mixture by tablespoonfuls into hot oil (375ºF.); cook until golden brown, turning once. Drain on paper towels; serve hot. Yield: about 2 dozen
Made these tonight - As usual I did not follow directions, I used canned corn and 2 tablespoons of milk. Family loved them!!!!
