2 tablespoons of shortening 1 medium onion, coarsely chopped 1/2 cup of chopped green pepper 12 ears of fresh corn, cleaned and kernels cut from cob 1 cup of chopped tomatoes 1/4 cup of milk 1 1/4 teaspoons of salt 1/2 teaspoon of sugar 1/8 teaspoon of pepper A dash of red pepper 1 tablespoon of butter or margarine
Melt shortening in a large Dutch oven. Add onion and green pepper; saute until tender. Add corn, tomatoes, milk, salt, sugar, and pepper. Cook, uncovered, over medium heat for 30 minutes, stirring frequently. Stir in butter before serving. Yield: 6 to 8 servings. |
