Cucumber Mold 2

2 envelopes of unflavored gelatin
1/2 cup of cold water
2 cups of boiling water
3 large cucumbers
1 onion
1/4 cup of lemon juice
1/2 teaspoon of sugar
salt and pepper



Dissolve the gelatin in cold water. Add the boiling water, stir and set aside to cool. Grate the cucumbers and squeeze out the water. Grate the onion and mix all ingredients together. Rinse a ring mold or two pint pan with cold water and pour in the mixture. Refrigerate until it sets. Serve with sour cream of mayonnaise on a bed of lettuce.

Use the same quality of water and gelatin to create your own gelatin salads. Strips of red and green peppers, red onions, tomatoes, celery, carrots, they're all interchangeable and you'll soon find a favorite.
