Cucumber Soup 2

4 or 5 small cucumbers, peeled and sliced
1 garlic clove, mashed
1 potato, sliced fine
Bouquet Garni
salt and pepper
5 cups of chicken stock
2 medium size onions, peeled and sliced
butter to sauté cucumber, onion & potato
parsley, chopped for garnish
1 1/2 cup of cream, sweet or sour



Melt butter in a saucepan, put in cucumbers, onions, potatoes, salt, garlic and pepper. Smother the vegetables, covered, for 10 to 15 minutes, stirring from time to time. Pour over stock, put in Bouquet Garni, check season, cover and simmer for 1 hour. Remove Bouquet, pass soup through a fine sieve, pressing vegetables through. Add cream, sour or sweet, be careful with sour cream when reheating, it curdles if heat is too high or soup is too hot. Check seasoning, reheat or serve ice cold. Garnish with parsley and paprika. Serves 4 -5
