Curried Baked Cauliflower
1 large head cauliflower
1/2 teaspoon of salt
one 10 1/2 ounce can of cream of chicken soup
one 4 ounce package of cheddar cheese
1/3 cup of mayonnaise
1/2 teaspoon of curry powder
1/4 cup of dried bread crumbs
2 tablespoons of butter or margarine, melted

Preheat oven to 350ºF. Break cauliflower into flowerets. In covered, large
saucepan over medium low heat, in 1 inch boiling water, cook cauliflower
with salt for 20 minutes, drain well. Meanwhile in 2 quart casserole, stir
together undiluted soup, cheese, mayonnaise and curry powder, add
cauliflower and mix well. Toss bread crumbs in melted butter and sprinkle on
top. Bake for 30 minutes or until casserole is hot and bubbly. Makes 8 - 10
servings. If frozen, thaw overnight in refirgerator. Preheat oven to 350ºF.
and bake for 40 minutes.
