Ham & Leek Pie

2 leeks (white part only) sliced thin
1 large. onion, sliced thin (1 cup)
3 tablespoons of  margarine
1 tablespoon of  flour
1/2 teaspoon of salt
1/8 teaspoon of  pepper
1/8 teaspoon of  nutmeg
1 cup of  milk
4 eggs, slightly beaten
1/4 pound of cooked ham, diced fine
1 unbaked 9 inch pie shell



In large skillet, sauté leeks and onion in margarine until tender. Combine flour, salt, pepper and nutmeg and stir into onion mixture. Gradually stir in milk; cook and stir until mixture thickens and begins to boil. Stir some of it into eggs, then add eggs to skillet. Stir in ham. Pour into pie shell. Bake at 400ºF.  for 30 minutes, or until knife inserted near center comes out clean.
