| | Marinated Artichoke Hearts
2 jars (6 ounces each) of marinated artichoke hearts 1 garlic cloves, minced 1/2 cup of chopped onion 4 eggs, beaten 1/4 cup of fine dry bread crumbs 2 tablespoons of snipped parsley 1/2 teaspoon of salt 1/2 teaspoon of oregano 1/4 teaspoon of pepper 1/4 teaspoon of Tabasco 2 cups (8 ounces) of shredded Cheddar cheese
Cut up artichoke hearts, reserving liquid from 1 jar. Pour liquid into a skillet, and sauté garlic and onion. Combine with eggs, bread crumbs, parsley, salt, oregano, pepper and Tabasco. Stir in cheese and artichoke hearts. Pour into a greased 1 1/2 quart shallow baking dish. Bake uncovered, at 325ºF. for 30 minutes, or until set. 6 servings |
