Mixed Garden Vegetables

6 slices of bacon
6 medium size green peppers, seeded and sliced into rings
8 medium tomatoes, peeled and sliced
4 medium onions, sliced
2 cups of sliced fresh okra
1/2 teaspoon of salt
1/8 teaspoon of pepper



Cook bacon until crisp. Remove bacon, reserving bacon drippings. Crumble bacon, and set aside.

Pour  1 tablespoon of bacon drippings into a 13x9x2 inch baking dish; tilt to coat surface. Layer green pepper rings, tomato slices, onion slices and okra in baking dish. Sprinkle with salt and pepper.

Top vegetables with bacon and bread crumbs; pour remaining drippings over breadcrumbs. Bake at 325ºF. for 1 hour or until vegetable are tender. Yield: 10 servings
