Mushrooms with Brown
Sauce
24 - 30 mushrooms
2 tablespoons of butter
2 tablespoons of parsley
1 1/2 cup of beef stock or bouillon
4 tablespoons of sour cream
2 tablespoons of flour
2 tablespoons of butter
1/2 teaspoon of chives |

Cut the mushrooms into thin slices. Melt
butter and add mushrooms. Stir gently and add 1 tablespoon of parsley & 8
tablespoons of beef stock. Cover and cook until mushrooms are tender. While
they are cooking prepare a sauce by browning 2 tablespoons of flour and 2
tablespoons of butter. When light brown, ass 1/2 teaspoon of chives and 1
tablespoon of parsley. After it is nicely browned, add enough beef stock to
make a sauce. Cook for 10 minutes, then add the mushrooms mixture and lemon
juice and stir. Add 4 tablespoons of sour cream and serve
