4 medium baking potatoes 1/2 cup of diary sour cream 1 ounce of blue cheese, crumbled (1/4 cup) 1/4 cup of milk 1/4 cup of butter or margarine 3/4 teaspoon of salt a dash of pepper 4 slices of bacon, crisp cooked, drained and crumbled
Scrub the potatoes, rub with shortening. Bake at 400ºF. till potatoes are done, about 1 hour. Remove from oven, cut a lengthwise slice from top of each potato. Scoop out inside of each, mash. Add sour cream, blue cheese, milk, butter or margarine, salt and pepper to mashed potatoes, beat with electric mixer till fluffy. Spoon the mixture lightly into potato shells. Place on baking sheet, return to oven until heated through, about 15 minutes. Sprinkle each with crumbled bacon. Makes 4 servings
