| | Boiled New Potatoes #2
1pound of new potatoes, cleaned 1/2 teaspoon of salt 2 tablespoons of butter or margarine, melted 1/4 teaspoon of white pepper
Combine potatoes, salt and 1 inch water in a medium saucepan. Bring to a boil. Reduce heat; cover and simmer 20 minutes or until tender. Drain. Pare a 1 inch strip around center of each potato. Combine butter and pepper. Add potatoes, and toss lightly to coat well. Serve immediately. Yield 4 servings. |
