| | Boiled Potatoes with Jackets
4 medium potatoes, cleaned
1 teaspoon of salt
Butter or margarine, melted, optional
salt to taste, optional
Soak potatoes in cold water to cover for 1 hour; drain.
Cook potatoes in boiling water to cover 25 minutes. Add 1 teaspoon of salt, and cook and additional 10 minutes or until tender. Drain well. Serve with melted butter and salt to taste, if desired. Yield: 4 servings. |
