| | Deviled Potatoes
8 medium potatoes 1/2 teaspoon of turmeric 1 teaspoon of salt 1 teaspoon of garlic powder 2 tablespoons of vegetable oil 1 tablespoon of chopped yellow onion 1/2 teaspoon of freshly grated ginger 1/2 teaspoon of chopped fresh chili pepper 1/3 cup of boiling water 1/2 teaspoon of crushed coriander seeds 1/2 teaspoon of anise seed 1/3 teaspoon of poppy seeds
Peel the potatoes and cut each lengthwise in 8 slices. Mix turmeric, salt, and garlic powder. Sprinkle this on the potatoes, stir and let stand for about 15 minutes. Heat half the oil and fry the potatoes half soft on low heat. Heat the rest of the oil in another pan and brown the chopped onion, the chili pepper and the ginger. Pour on the boiling water. Add the potatoes and let them absorb the liquid over low heat. Sprinkle on the other seasonings and shake the potatoes in the pan. Taste and correct seasoning with salt if needed. Serves 4 |
