| | Finland Hasselback Potatoes
12 oval shaped potatoes, peeled 1 teaspoon of salt 3 tablespoons of margarine or butter 4 tablespoons of grated Parmesan cheese 2 tablespoons of bread cubes
Cut potatoes into thin slices, but not quite through to the lower edge, so that the slices hold together. Place potatoes, with slices upward, into a well buttered casserole. Sprinkle with salt and dot with bits of margarine. Bake in a very hot oven (450ºF.) for 20 minutes; basting occasionally. Sprinkle with cheese and bread crumbs and bake another 25 minutes without basting. 4 servings
