4 medium size potatoes 1 small onion, minced 2 cloves garlic, minced 1 bay leaf 1/4 teaspoon of rosemary 2 teaspoons of chopped parsley 1 tablespoon of butter 3 tablespoons of hot milk 1/8 teaspoon of mace
Cook the potatoes in a saucepan in enough boiling water to which have been added onion, garlic, bay leaf, rosemary and parsley. Cover and cook 20 - 30 minutes or until tender. Remove bay leaf. Drain, mash, and add butter, hot milk and mace. Beat until creamy. Garnish with parsley. Serves 4
