Whipped Sweet Potatoes

8 medium yams (or sweet potatoes)
1 cup of evaporated milk
2 teaspoons of vanilla
1/2 cup of brown sugar, packed
1/2 stick of butter
1/2 teaspoon of cinnamon
a pinch of freshly grated nutmeg
2 tablespoons of orange juice
4 pears, peeled, cored, poached until tender, pureed
1 cup of chopped pecans




Bake, peel and whip the potatoes. Mix the milk, vanilla, sugar and butter; scald the mixture. Add to the potatoes, then add the orange juice, cinnamon, nutmeg, pecans and pear purée. Pour into a baking dish and bake at 350ºF. for 15 minutes or so, until thoroughly warmed through. Servings: 4
