Potato Cakes

2 cups of grated raw potato
2 eggs, well beaten
1 tablespoon  of grated onion
1 tablespoon of finely cut scallion tops
1 1/2 teaspoons of salt
1/8 teaspoon of pepper
1/2 cup of fine bread crumbs
1/2 teaspoon of baking powder





Let grated potatoes drain in sieve. Beat eggs. Combine with onion, scallion tops, salt and pepper. Mix with drained potatoes. Combine crumbs and baking powder. Stir into potato mixture. Drop from tablespoon onto greased griddle or skillet. Cook over low heat until brown on one side. Turn and brown  the other. Makes 12 or more cakes. If necessary, add more crumbs, or a little flour, to make mixture the right consistency.
