| | Potatoes Au Gratin
3 large potatoes 4 tablespoons of butter 1/2 cup of grated Swiss cheese 1 pint of stock 4 tablespoons of parmesan salt & pepper
Peel and slice potatoes thinly and soak in water for a few minutes. Drain well. Butter a shallow baking dish and add a layer of potatoes. Season with salt and pepper and add another layer of potatoes. Dot with butter and cover with grated cheese and a little parmesan. Pour over a quarter of the stock and continue until you've used all the ingredients, ending with a layer of cheese. Dot with butter and bake in an oven preheated at 350ºF. for 1 hour.
Use thin slices of onions or other vegetables with the potatoes. Add a can of chopped anchovies but cut down on the salt. Use cream instead of stock or a soup of your choice. Sprinkle with chopped herbs.
