2 patties or 2 cups of frozen shredded has brown potatoes 1 cup of cottage cheese 1 cup of sour cream 2 tablespoons of chopped green onion 2 tablespoons of chopped parsley 1 garlic clove, minced 1/2 teaspoon of salt 1 tablespoon of butter or margarine
Place frozen hash brown potatoes in microwave safe 1 quart casserole. Cover with plastic wrap, microwave at HIGH, 3 minutes. Stir, microwave at HIGH, 3 minutes longer. Add cottage cheese, sour cream, green onion, parsley, garlic, and salt. Mix well, dot with butter. Cover with plastic wrap, microwave at HIGH 4 minutes. Stir. Cover with paper towel, microwave at HIGH, 2 minutes. Remove from oven, let stand 5 minutes, covered with paper towel, before serving. Makes 4 servings |
