| | Roasted Potatoes w/Rosemary & Garlic
4 red or new potatoes 2 tablespoons of olive oil 1/2 teaspoon of thyme 1/2 teaspoon of rosemary, crumbled pepper to taste 4 garlic cloves, unpeeled 1 bay leaf
Start oven 450ºF. Quarter potatoes and place in casserole that has been coated with olive oil. Sprinkle thyme, rosemary and pepper over potatoes. Toss in garlic cloves, and bay leaf. Bake for 40 minutes, turning occasionally, until potatoes are tender. Squeeze garlic pulp onto potatoes. Serves 4
