Scalloped Potatoes 1

8 cups of raw potatoes, sliced
1 teaspoon of salt
2 tablespoons of butter
2/3 can of milk
1 can of cream of vegetable soup
1 can of cream of cheese soup




Place potatoes in greased baking dish, sprinkle with salt. Add soup and milk. Cover and bake for 30 minutes at 350ºF. Remove cover and continue to bake for 1 hour or until potatoes are tender. Dot top with butter before baking. Serves 12 

Scalloped Potatoes 2

8 medium potatoes, pared and sliced
1/4 cup of finely cut green pepper
1/4 cup of minced onion
1 3/4 cups of medium white sauce
2 teaspoons of salt
1/4 teaspoon of pepper

Preheat oven to 350ºF. Grease a 2 quart baking dish.  Make alternate layers of potatoes, green pepper, and onion in prepared baking dish. Combine sauce and seasoning. Pour over potatoes. Cover dish. Bake about 1 hour. Uncover and continue baking 30 minutes, until top has browned. Makes 8 servings

Old fashioned  version of this delicious dish is made without green peppers and onion. The well seasoned sauce is poured over potatoes, and additional seasoning added to potatoes if needed. Bake as described in recipe. Top should have areas of brown where sauce is thickest.
