| | Skillet Hash Browns with Cheese
one 12 ounce package of frozen, loose-pack hash brown potatoes 1/4 cup of cooking oil 1/2 teaspoon of salt 1 cup of Swiss or Cheddar cheese, shredded
In a large skillet, heat oil over medium heat. Add potatoes; spread into an even layer, but do not pack them down. Sprinkle with salt. Cover and cook over medium-high heat for 6 minutes; stir. Cover and cook for 3-4 minutes more, or until golden brown. Remove from heat. Add cheese and toss; cover for 1 minute. Serves 4. |
