1 1/2 pounds of sweet potatoes 1/3 cup of butter 2/3 cup of honey salted water
Scrub the sweet potatoes and cut into quarters. Place in a stewing kettle. Cover with salted water and boil until almost done, about 30 minutes. Drain; cool slightly. Remove skins and slice crosswise in 1/2 inch slices. Place in a 1 1/2 quart buttered casserole. Mix honey and butter together. Bake at 350ºF. for 20 - 25 minutes or until lightly browned. Serve at once. Serves 4 - 6
