| | Pumpkin au Gratin
1 can (1 pound) of pumpkin 1/2 teaspoon of salt freshly ground black pepper a dash of nutmeg 1/4 teaspoon of ground cloves 2 tablespoons of melted butter 1 egg 1/2 cup of heavy cream 2 tablespoons of grated Parmesan cheese
Thoroughly combine the pumpkin, salt, pepper, nutmeg, cloves and butter. Place in a small lightly buttered casserole. Beat the egg lightly and mix in the cream and Parmesan cheese. Pour over the pumpkin. Bake in a 400ºF. oven for 30 minutes or until the top is puffed and lightly browned. Serves warm. 4 to 6 servings |
