Southern Pumpkin Puffs

3 cups of fresh pumpkin, cooked and mashed or canned pumpkin
1 1/2 cups of flour
1/4 teaspoon of allspice
1/8 teaspoon of nutmeg
1/8 teaspoon of ginger
1/4 teaspoon of cinnamon
1/2 teaspoon of baking powder
1/2 teaspoon of salt
1 egg, beaten




Remove the seeds and fibers from the fresh pumpkin, cut in pieces and pare each piece. Cut again into small pieces, cover with boiling water, and cook until tender, about 20 minutes. Drain thoroughly and mash well. Measure 3 cups. (Or use canned pumpkin.)

Sift the flour and the dry ingredients together, and add to the pumpkin with the beaten egg. Heat deep fat to 370ºF. or until a bread cube will brown in 60 seconds. Drop the pumpkin mixture in the hot fat in spoonfuls, a few at a time and fry until golden brown, about 5 minutes. Drain on paper towels. Sprinkle with powdered sugar, if desired.
