This Indian vegetable dish is especially cooling on a hot summer day and can be easily altered to fit whatever you have on hand or whatever fresh produce is in abundance.
1 eggplant, boiled for 5 minutes, drained and chopped 1 cucumber, peeled, seeded and chopped 2 tomatoes, seeded and chopped Cayenne pepper to taste Freshly ground pepper 2 cups of nonfat plain yogurt
Mix all ingredients and chill for at least an hour before serving. Serves 4
