Rhubarb Coffee Cake

 

Rhubarb Coffee Cake
 
 2 cups of sugar
 1 cup of shortening
 2 Eggs
 2 teaspoons of cinnamon
 2 teaspoons of baking powder
 1/4 teaspoon of salt
 1 cup of cold coffee
 3 cups of flour
 3 cups of finely chopped rhubarb, peeled 


 

Instructions:

Cream together sugar and shortening, add the eggs. Add the next 3 ingredients. Add coffee and flour alternately. Add rhubarb. Pour into a greased 9 x 13 pan. Sprinkle with cinnamon, sugar (add nuts if you want). Bake at 350ºF. for 45 minutes. Makes a moist coffee cake.
