5 slices of bacon 1 large green pepper, seeded and chopped 1 medium onion, chopped 2 cups of fresh corn cut from cob 2 large tomatoes, peeled and chopped 1/2 teaspoon of salt 1/4 teaspoon of pepper 1 cup ( 4 ounces) of shredded Cheddar cheese Toast Points
Cook bacon in a large skillet until crisp; remove bacon, reserve drippings in skillet. Drain bacon and set aside.
Sauté green pepper and onion in reserved bacon drippings until tender. Add corn, tomatoes, salt, and pepper; cook over medium heat, 10 minutes, stirring frequently. Add cheese, and stir until cheese melts.
Top toast points with vegetable mixture. serve immediately. Yield: 6 to 8 servings. |
