4 medium size firm tomatoes, cut into 1/4" slices 1 cup of diced celery 1/2 cup of chopped onion 1/4 cup of butter or margarine 1 teaspoon of salt 1 teaspoon of sugar 1 teaspoon of dried whole basil 1/8 teaspoon of pepper 1 cup of seasoned croutons
Arrange the tomatoes in a buttered 12x8x2" baking dish. Sauté celery and onion in butter for 2minutes, stir in seasonings. Set aside 1/4 cup of celery mixture, spoon remainder over tomatoes. Combine reserved celery mixture and crotons, tossing gently, spoon over tomatoes. Combine reserved celery mixture and crotons, tossing gently, spoon over tomatoes. Cover and bake at 350ºF. for 30 minutes. Yield 4 - 6 servings |
