Scalloped Spinach

1 package of frozen chopped spinach, cooked and squeezed dry
2 tablespoons of chopped onion
2 beaten eggs
1/4 cup of melted butter
Salt and pepper to taste
1/2 cup of milk
1/2 cup of grated cheese
1/4 cup of Parmesan cheese
1/2 cup of bread crumbs or crushed stuffing mix




Mix all ingredients. Place in a buttered shallow baking dish. Sprinkle with additional buttered crumbs. Bake at 350ºF. for 30 minutes.

Scalloped Spinach 2

One 10 ounce package of frozen chopped spinach
12 crisp salted crackers, crushed
1/2 cup of  milk
1/8 teaspoon of pepper
1 tablespoon of butter

Preheat oven to 375ºF. Cook frozen chopped spinach as directed on package label. Place half of the crushed crackers in the bottom of well-greased 1 quart casserole. Place cooked spinach evenly over crushed crackers. Sprinkle second half of the crushed crackers over spinach. Add milk. Sprinkle with pepper and dot with butter. Bake at 375ºF. for 20 to 25 minutes. 

Scalloped Spinach 3

Two 10 ounce packages of frozen spinach
3/4 cup of  milk
3/4 cup of shredded American cheese
3 beaten eggs
1/2 teaspoon of salt
Dash of pepper
3 tablespoons of chopped onion
1 cup of soft bread crumbs
1 tablespoon of butter, melted

Cook spinach and drain well. Mix with milk, 1/2 cup of cheese, egg, onion, 1/2 teaspoon salt and dash of pepper. Turn in greased 8 x 8 x 2 inch baking pan. Bake at 350ºF. for 25 minutes. Combine crumbs, remaining cheese and butter; sprinkle atop spinach. Bake until knife inserted in center comes out clean (10-15 minutes longer). Let stand for 5 minutes before serving. Makes 6 servings. 

Scalloped Spinach with Potatoes 4

1 pound of fresh spinach, washed & chopped or 10 ounces of frozen spinach, drained & squeezed dry
4-6 medium potatoes washed & thinly sliced
1/4 cup of butter, melted

Reserve 1 1/2 cups potatoes and combine the remainder with the spinach. Butter a 2 quart casserole with part of the butter and add remaining butter to potato-spinach mixture. Separately combine: 1/4 c. milk 1 tsp. salt 1/4 tsp. nutmeg 1/4 tsp. cayenne 2 tbsp. minced onion 1/4 c. grated Cheddar Add this to potato - spinach mixture and pour it all into the buttered baking dish. Cover evenly with reserved potatoes and cover the casserole. Bake at 350ºF.  for 50-60 minutes or until potatoes are tender. Top with 1/4 cup grated cheese. Bake an additional 10 minutes and serve.
