| | Breaded Spinach
Filling: 1 pound of spinach 1/2 cup of raisins 1/4 cup of pine nuts 2 tablespoons of oil 1 clove garlic, chopped 1/2 teaspoon of salt
Pastry: 2 cups of flour 1 teaspoon of salt 9 tablespoons of butter 3 tablespoons of water 1 egg, lightly beaten
Wash the spinach and cook until tender in a covered pan. Drain off excess liquid and chop the spinach finely. Cover the raisins with boiling water and simmer for 5 minutes. drain, chop and add to the spinach together with the pine nuts. Heat the oil in a skillet, add the chopped garlic and sauté until brown. Add the spinach mixture and salt and sauté 2 to 3 minutes. To prepare the pastry, sift the flour with the salt. Cut in the butter with a pastry blender or 2 knives. Add the water and stir with a fork into a ball. Roll out 1/8 inch thick and cut into 4 inch rounds. Place tablespoon of spinach mixture in the center of each round, moisten the edges of the pastry and fold in half. Brush with the beaten egg. Bake in a preheated 425ºF. oven for 15 to 20 minutes. 6 to 8 servings |
