Spinach Au Gratin

3 pounds of fresh spinach, cleaned and cooked
1/4 cup plus 2 tablespoons grated Parmesan cheese
1/4 cup plus 2 tablespoons of finely chopped onion
1/4 cup plus 2 tablespoons whipping cream
1/4 cup of butter or margarine, melted
1/2 teaspoon of salt
1/8 teaspoon of pepper
1/2 cup of buttered breadcrumbs




Combine spinach, cheese, onion, whipping cream, butter, salt, and pepper; stir well. Spoon into a 1 quart casserole. Top with breadcrumbs. Bake at 450ºF. for 10 minutes or until browned. Yield 4 servings
