Spinach & Rice

one 10 ounce package of frozen chopped spinach, cooked and drained
one 10 3/4 ounce can of condensed cream of mushroom soup
1 1/2 cups of boiling water
1 1/3 cups of packages precooked rice
1/8 teaspoon of garlic powder
1 teaspoon of lemon juice
2 hard cooked eggs, sliced
3/4 cup (3 ounces) of shredded Cheddar cheese
one 3 ounce can of French fried onions



Combine the spinach, soup, boiling water, rice, garlic powder, and lemon  juice. Put into a 1 1/2 quart shallow baking dish.
Bake, covered, at 400ºF. for 25 minutes or until rice is tender. Remove cover and stir. Arrange eggs over top. Sprinkle with cheese. Place onions around edge. Bake an additional 5 minutes or until cheese is melted. 4 servings
